LEFTOVER CHAPATI RECIPE






INGREDIENTS



1.         Leftover Chapattis (cut into small pieces)               5 Nos

2.         Onions (finely chopped)                                             2 Nos

3.         Ginger/Garlic paste                                                     1 tbsp

4.         Curry Leaves                                                                 7-8 leaves

5.         Cumin seeds                                                                 1 tsp

6.         Green chillies (flaked)                                                2 Nos

7.         Tomatoes (finely cubed)                                            3 Nos

8.         Coriander leaves(finely chopped)                            a bunch

9.         Turmeric powder                                                       1 tsp

10.       Oil                                                                                 2 tbsp

11.      Sev ( crispy gram flour chips) (optional)                 2 tbsp


METHOD

Heat oil in a wok and add curry leaves. Once the leaves splutter, drop in cumin seeds. Add onions and green chillies. Stir fry for about 2-3 minutes and put ginger/garlic paste. Keep cooking on low flame till the onions turn pinkish-brown in colour. Add cubed tomatoes and continue cooking till the tomatoes become tender.  This may be followed up with turmeric powder. Stir fry the mixture for about a minute and then add the pieces of chapattis. Mix well stirring continuously for some time. Remove from fire. Garnish with coriander leaves and top with sev for crunchy flavour.
