Khajur Rolls
Ingredients:
Khajur (Dates) : 2 cups (seedless/ de-seeded)
Mixed Dry Fruits (chopped): 1 1/2 cup
Clarified Butter (Desi Ghee) : 3 tbsps
Desiccated Coconut: 1/2 cup
Method :
Blend the Khajur
in a blender without using water. It takes some time to do this as Khajur is sticky.
Heat a non-stick pan and put 2 tbsp Clarified Butter and heat. Then add chopped
Dry Fruits and stir fry for some time. Remove and keep aside. Put Khajur in the
same pan and sir continuously. Add the remaining 1 tbsp Clarified Butter. Keep
stirring till it becomes soft and pliable. Then add the Dry Fruits and
mix well. Remove from pan. Once it cools down a little then prepare cylindrical
shaped rolls. Spread the Desiccated Coconut in a Plate and roll over the Khajur
rolls in it so that the Coconut gets coated all over. Then tightly pack these
rolls in a Cling Wrap or Aluminium Foil and refrigerate for 3-4 hours. Remove
from refrigerator and cut into roundels. Store in an air tight container.
