GUJIA


Ingredients
1. Maida (Refined flour):2 cups
2. Khoya :   1 cup
3. Sugar (Powdered):   1 cup or according to taste
4. Mixed dry fruits (chopped almonds & cashewnuts and raisins): a handful
5. Desi Ghee (Clarified butter):  2 tbstp
6. Oil: for frying
7. Elaichi (Green cardamom) powder:  a pinch  (optional)


Method   

Grate khoya and roast it lightly in a non-stick pan. To this, add the powdered Sugar, Elaichi powder and Dryfruits. This is the filling for the Gujias. Separately, mix Desi Ghee in Maida and knead a stiff dough using cold water. Keep aside for about half an hour. Make small balls from the dough and roll out into Puris. Put about 2-3 tsp of the filling in half of the Puri and fold the remaining half on top. Seal the edges properly with fingers or a fork using water.  Alternately, Gujia mould can be used to give proper shape. Heat oil in a wok and deep fry the Gujias till golden brown.
