CURDLED MILK KHOYA AND PEDA


INGREDIENTS

Spoiled/Curdled Milk- 2 ltrs
Sugar- According to taste
Clarified Butter: 2 tbsp
Cardamom Powder- a pinch

Method:
Ever wondered what to do with curdled milk?  There is indeed a lot that can be done with it. When the milk gets curdled, separate the Paneer from the water with the help of a muslin cloth. Put 2 tbsp of Clarified Butter in a sauce pan and then add the Paneer. Cook on low flame in order to evaporate the remaining water. Continue cooking for about 10 -12 minutes till the Paneer becomes grainy. This is Khoya which can be used in making a number of sweets. For making Pedas, add Sugar and Cardamon powder   to the Panner while it is still cooking. Once it becomes grainy, remove from the flame. Shape into Pedas and store in an air tight container.
